Apple or Other Fruit Crumble

 Mix up a large batch of the crumble mixture, and keep it in a container in your freezer. The crumble part can be made according to what you have in your pantry... use a base of 1 cup flour - white  or wholemeal or a mix of the two, 1 cup white or brown sugar, and 100 gms of melted butter or margarine. Mix those
together until crumbled, and add your choice of 2 cups total of one or a range of the following: rolled oats, oat bran, coconut, crushed weetbix, cornflakes, rice bubbles, wheatgerm, bran, sesame seeds, sunflower seeds, pumpkin seeds, chopped nuts - peanuts, walnuts, or other nuts, etc.. You can double or triple the recipe as it freezes well.

When you want to make a fruit crumble, you'll just need to wash, core and slice some apples (leave skins on for extra flavour and nutrition), or other fruits (feijoa's, peaches, plums, rhubarb, pears, nectarine's, berries, etc..etc..) and place in a lightly greased oven dish, sprinkle over some crumble mix straight from the freezer and pop it in the oven at 180°C to cook for about 20-30 minutes, while you eat dinner.

Bran Muffins

 Preheat oven to 190°C. Melt in a microwave proof bowl or a saucepan: 4 tablespoons golden syrup and 50gms butter or margarine. While that's melting, sieve into a large bowl: 2 cups flour, 3 tsp baking powder, 1 cup brown or white sugar, 1 tsp salt. Add 2 cups baking bran and mix in. Pour 2 cups of milk into a bowl. Add 2 eggs and beat or whisk in well. To this, add your choice of: 1 mashed banana, 2 medium apples, grated - skin on is good, 1 medium sized carrot or pear grated, 1 cup cooked or fresh peaches, chopped into small pieces, etc..etc.. Add 2 tsp baking soda to the melted butter and golden syrup and mix in well until the mix begins to bubble. Make a hollow in the centre of the dry ingredients and pour the milk and egg mix onto the bran mix. Quickly pour the butter mix over, and mix lightly until just combined. Place into lightly greased muffin pans and bake about 12-15 minutes or till cooked.

Carrot Cake

1 1/2 cups plain flour
1 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice (or mixed spice)
1/2 tsp salt
1 large cup carrots
(1/3 cup oil - optional)
2 eggs lightly beaten
1/2 cup crushed pineapple with liquid
1 tsp vanilla essence

Combine flour, sugar, baking powder, baking soda, spices, salt and carrot.  Mix together well. Beat in remaining ingredients. Pour batter into a well greased ring tin. MICROWAVE - cook on Medium for 8-10 minutes.  When cooked place double layer of paper towel over top and let stand for 5 minutes before turning out.  

OVEN - cook for 30 minutes at 180C.  Let stand for 5 minutes before turning out. Ice with Cream Cheese Icing or sprinkle Icing Sugar over top of cooled cake. 

Cheese puff muffins 

3/4 cup of flour,
1 beaten egg,
pinch of salt,
2 teaspoons of baking powder
chopped small onion 

Mix all ingredients together if the mix seems dry add some water not much just to blend, and pour into 6 large muffin tins, sprinkle grated cheese on the top and cook 175°C for 20mins serve with sour cream on the side and some cubed tomato 2 to a serve 

Chocolate Chippie Bites

300g unsalted butter
1 cup packed brown sugar
2 eggs, lightly beaten
1 tsp vanilla essence
3 cups self-raising flour, sifted
250g dark (milk or white) choc bits
70g chopped walnuts (optional) 

Preheat oven to 180°C  Line 3 baking trays with sheets of non-stick baking paper. Cream butter and sugar then add eggs, a little at a time, beating after each addition. Add essence. Add remaining ingredients and stir well until combined. Taking 1 tsp at a time, roll into balls.  Place onto a prepared tray, allowing a little room for spreading.  Bake for 8-10 minutes until lightly browned. Place on cooling racks and allow to cool completely before storing in an airtight container.
